Courgette Overload...

We have has so much zucchinis (courgettes) from the garden this year, it's incredible! 
The largest one we have groen so far is over 5 lb! and the courgettes still keep growing! 
But I'm starting to run out of ideas in how to use them...
So far I have fried them, used them in stews and carries, made courgette fritters and made an amazing courgette and lemon cake with a cream cheese and lemon curd frosting - which doesn't sound very appealing, but trust me its like a ten times better carrot cake! You have to try it! 

Then I had the idea of grilling and filling them with ricotta cheese and chilli - they were a lovely apertiser accompanied by parmigiano drizzled in balsamic vinegar :)


For mains I used Jennifer's recipe of salsicce con l'uovo, which I was taught in Umbria, but I used delicious pork and black pepper sausagss from the local butchers. Best sausage dish that I have ever made! It's astonishing how flavoursome it was considering its just white wine, grapes and parsley as the sauce! 

Early on in the morning I prepared home-made gelato inspired by reading the Chiappas Sisters blog. 
Since being home I have had Joe's coffee ice cream which is the best ice cream in Wales, but nothing compares to Italian gelato! 
I made two flavours, the first was coffee with chocolate chunks as its my all time favourite flavour of ice cream and the second was inspired by a gelato I tried in Perugia, Umbria of red wine ice cream.
The red wine gelato has deffinatley my favourite now, it's sooo creamy but bursting with gorgeous berries!



For bank holiday Monday I invited my cousins for dinner, where I of course made my fresh tagliatelle pasta! 
For starters we had a mix from fresh olives to rosemary bread to fresh cherry tomatoes from the garden to gorgeous welsh chilli cheese (it was the favourite).
For mains I made my tagliatelle alla ragu which some how was even more delicious than when I first made it...
After a few trials I now have discovered the right amount of ingredients for a set amount of people. It's perfecto now! :)



For dessert I made the most amazing tiramisu! But unfortunately we all demolished it before I had a chance to take a photo! Proves how delicious it was! :)
